The Teriyaki Chicken Salad That Stays Fresh All Week
A couple of years ago, after the realities of being a full-time working mum really started to take their toll, I made a promise to start investing in me again... starting with something simple: food prep and actually eating proper meals.
This Teriyaki Chicken Salad has become one of my go to’s for the week for a while now. It’s healthy, high in protein, and the best part - it actually stays fresh and crispy for days.
The secret? It’s all in the layering and the storage.
Teriyaki Chicken Salad Recipe
Serves 4 | Prep Time: 20 mins | Cook Time: 15 mins (for chicken)
Ingredients
Teriyaki Chicken

500 g boneless, skinless chicken breast, cut into bite-sized pieces

3 tablespoons teriyaki sauce (for marinade)

½ tablespoon olive oil (for cooking)
Greek Yoghurt Dressing
-
½ cup (125 ml) high-protein Greek yoghurt
-
1 teaspoon minced garlic
-
1 teaspoon apple cider vinegar
-
Salt and pepper, to taste
Salad Layers
-
2 cups (≈ 150 g) red cabbage, finely shredded
-
1 cup (≈ 150 g) cherry tomatoes, halved
-
2 cups (≈ 370 g) cooked quinoa, cooled (about 2/3 cup raw quinoa)

4 cups (≈ 120 g) baby spinach leaves
Method

Cook the Chicken:
In a bowl, combine chicken pieces with teriyaki sauce. Marinate for 10 minutes (prep the dressing while you wait!)
Heat olive oil in a pan over medium/high heat and cook chicken 6 - 8 minutes until cooked through and caramelised. Set aside to cool. -
Make the Dressing:
In a small bowl, whisk Greek yoghurt, minced garlic, apple cider vinegar, salt, and pepper until smooth. -
Assemble the Salads:
Split all incredients evenly between 4 meal-prep containers or jars:-
Add dressing to the bottom.

Layer red cabbage on top.

Add quinoa and teriyaki chicken.

Finish with tomatoes, then baby spinach leaves.

Store & Serve:
Seal your containers and refrigerate for up to 4 days.
When ready to eat, shake or stir to mix the dressing through.
